Begun as the country's smallest commercial distillery, Kings County has quickly proven to be a champion of New York spirits. Here, their moonshine is infused with ground cacao husks sourced from Raaka Chocolate, located in Red Hook. Founded on the principle of benefitting the farmers who grow their cacao, Raaka consistently pays stable prices above what is required by Fair Trade regulation. Suffice to say, the result of this partnership is far from what comes to mind as a "flavored" spirit. Dark chocolate is certainly the leading character: notes of dark wood, cherry, and scorched caramel support the lifted wave of chocolate. The palate, while not syrupy or heavy, also tastes first and foremost of pure dark cocoa, contrasted with a bit of spice and caramel, and finishing with a sweet-tart cherry note. Certainly a departure from the usual, and a fun experiment for cocktails (Manhattan, anyone?) as well as sipping with dessert.
