As one of the last surviving family-owned Champagne houses, calling Billecart-Salmon a historical winery is an understatement - the family's winemaking can be traced back to 1818. Produced from 40% Chardonnay, 30% Pinot Noir, and 30% Pinot Meunier, there is great balance with a bit of emphasis on the delicate lift of Chardonnay. The nose opens with pristine white flower, cranberry, raspberry, and a hint of red plum underscored by fresh citrus and a hint of brioche. On the palate, these red fruits give way to crisp acidity (which can be attributed to the house's preference for earlier picking), as well as a delicate, persistent bubble. Fresh and clean, it makes an excellent choice as a celebration aperitif, or an accompaniment to anything from carpaccio to fried seafood, to lighter fish dishes.
