Israel's inaugural whiskey shows the country's incredible distillate potential. Advised by the late great Jim Swan, they offer a few lines of non chill-filtered whiskeys, with the Whisky in Bloom group created especially for the US. A 2-year single malt, it's aged in a mix of Bourbon and red wine STR (shaved, toasted, and re-charred) casks, with Tel Aviv's naturally warm, sunny climate providing an accelerated maturation that does this bottling well. A nose of soft honey and sweet cereals is punctuated by moments of black pepper and smoke; the palate is creamy, fleshed out by stone fruits and ripe lemon with a butterscotch sweetness and savory tones. A delightful venture into the new frontier of whiskey, it's a great sipper (feel free to add a couple drops of water for sweet pastry notes) or go-to base for a number of typically Bourbon-based cocktails.
