Produced by Jose Garcia Morales and his family using a traditional Zapotec recipe. This is an Ensamble-type mezcal, made with 70% Espadin/30% Cuishe agave varieties. Roasted in an earthen pit and fermented with ambient yeast. The Cuishe makes a difference here, adding sweetness and body to the lean and vegetal character of Espadin. It’s a very well balanced mezcal, with just the right amount of smoke, herbal notes, and a floral finish. |
