Truly singular in style, Paleokerisio is produced from Debina and Vlahiko - white and red grapes, respectively. The wine itself is slightly sparkling and demonstrates a good amount of skin contact in fermentation withno added sulfur - a minerally texture is complemented by a tiny slip of residual sweetness in the wine. With aromas ranging between orange blossom, honeycomb, apricot, baked pear, and nutmeg culminating in a pleasantly tannic finish, this is the ultimate in cheese wine. Pair with washed-rind cheeses, fresh or aged sheep's or cow's milk cheeses, or a number of roasted root veggies.
