Pheasants Tears Tsolikouri - Orange Wine - Rep of Georgia, 2019 (750ml)

One of Georgia's 500+ native varieties, the expressive Tsolikouri is given its due with deliberate cultivation, great care, and traditional methods. Vinification takes place entirely in clay kvevri, throwing its aromas and texture into additional dimension. Abundant herbal and beeswax notes open into golden apple, green grape, and peach aromas with a hint of boxwood behind. Green and dried golden apple on the palate are characterized by hazelnut skins, peach skin, and a hint of Oolong tea before leading into thick tannins. One to enjoy with braised pork belly, chicken with green olives, or white fish with brown butter and capers.
